1.5 oz. Botanical Gin
1 oz. Pear-Vanilla Syrup*
.25 oz. Fresh Lemon Juice
2 Dashes Angostura Bitters
Sugar, for rimming
HOW TO MAKE IT COME TO LIFE
Rim coupe glass with syrup and sugar, set aside. Shake all ingredients (except sparkling wine) over ice until fully chilled. Strain liquid into prepared coupe glass. Top with Sparkling Wine. Dehydrated pear slice as garnish.
*Pear-Vanilla Syrup: combine 1 can diced pears, 1/2 cup sugar, 5 drops vanilla extract. Blend until sugar is fully dissolved and pear slices are incorporated. Strain through a fine mesh strainer. Also delicious splashed into a glass of bubbles!
